When you have lovely large scallops they are likely to have large roes as well. The red ones are female and the white ones male; both are tasty.
Scallops wrapped in bacon are famously delicious. But for your vegetarian friends? Both some Buddhist sects and some Islamic sects consider scallops allowable. (Maybe our friends call themselves pescatarians?) Soak some dried nori or other kelp strands and wrap with them instead of the bacon. Delicious.
Surely you have noticed how much press there has been this summer about Maine's growing kelp farming. In scallop farming and in kelp farming we have something that is good for the bay and good for our table. Doesn't it feel good to have some good news these days?
