I came up with this wonderful and surprising dish in that Spring overlap between beets, oranges, and whole farmed scallops. When the Facebook group New York Times Cooking Community saw this posted photo they loved it and you will too. It's all part of the newly-trendy recipe directions that are rather free-form!
Cook brown rice with golden raisins. Cook, peel and dice beets. Peel, segment and halve oranges bits and mix with the beets. Be generous with the oranges. Spice with cinnamon, cumin and coriander. Stir all with the cooked rice and serve. As you can see I cuddled butter-browned whole scallops with shrimp. Any seafood would probably go well and it works well as a completely vegetarian dish.
