Wine makers in France have long known that the local conditions of soil, climate, accompanying organisms etc in their vineyards affect the taste of the wine. They call that "terroir" from the Latin Terra. Now folks are coming to appreciate that local conditions in the sea, Latin, mare, are also responsible for the subtleties of taste.
