Too Many Zucchini But Never Too Many Scallops


You are not thinking of the "F word" yet (Frost - what did you think ? ) so the garden is still producing zucchini like mad. Whole Sea Scallops have not quite yet taken their "vacation" for a month of spawning and spat settling. Recipes that are not old-fashioned complete recipes but do-it-yourself ideas are all the rage. So now what?


Cook up some pappardelle or are any other favorite pasta. Slice zucchini and put them in a frying pan with a glug of olive oil to cook with some of that glut of tiny cherry tomatoes, some diced onion and garlic your favorite herbs to taste.


Meanwhile shuck and gut some petite scallops, popcorn style with a a bit of butter in the pan bottom.


Toss it all together and sprinkle on some Italian cheeses- Asiago, Parm, whatever you fancy or have on hand. What a fest! You will never make jokes about too many zukes again!
